How To Prepare Butternut Squash

The fall season brings a variety of seasonal squashes to the grocery store aisles…but do you know what to do with them?

Butternut squash has become one of our favorites–for it’s subtle sweetness and versatility.  It took me several tries though to learn how to prepare it with ease.

Steps to Prepare Butternut SquashSo, for those who are new to this fall veggie, here is a quick step-by-step to get the job done.

No fancy tools are needed to prepare a butternut squash.  A simple cutting board and sharp knife will do.

Prepare A Butternut Squash In 5 Easy Steps

Step 1. Cut the butternut squash on it’s side, cutting off the round “bulb” on the bottom.  Notice the point where my knife goes in.  This will make the peeling step a whole lot easier.

Step 2. Turn each part of the squash so that the cut-side is down on the cutting board.  This cut provides a solid, steady base from which to peel it.

Step 3. Slice down the sides of the butternut squash, cutting off the thin layer of outer skin.  Cut off the ends a bit as well. This will reveal the nice orange meat inside.

Step 4. Cut each side in half.  Scrape out the seeds with a spoon.

Step 5. Chop the squash into 1-inch pieces. This is a perfect size for roasting or throwing into your slow cooker.  Store any leftovers in your fridge or freezer for later!

Butternut Squash: Roasting Directions

  • Preheat oven to 415 degrees.
  • Take your 1-inch pieces and place them in a large bowl.
  • Drizzle with extra virgin olive oil and season with freshly ground salt and pepper.  Mix thoroughly.
  • Spread evenly in one layer onto a rimmed baking sheet.
  • Roast in oven for about 20 minutes or until you can easily prick the pieces with a fork.
