Herbed Green Beans
This simple side dish of herbed green beans is fast, fresh and tasty. Our kids gobble them up!
I’ve actually had this recipe in my collection for many, many years, evidenced by the fact that it’s in my mom’s handwriting. Gotta love the recipes that originate from your childhood AND coincide with your eating convictions.
We love this side dish best with roasted chicken and have even had it recently with our Butternut Squash Lasagna.
If you don’t have fresh green beans on hand, chopped asparagus would be a great substitute as well.
Herbed Green Beans
Ingredients
- 2 TBL extra virgin olive oil
- 1 lb fresh green beans washed, trimmed and cut
- 2-3 TBL unsalted butter
- 1/2 cup chopped onion
- 1 clove garlic minced
- 1/4 tsp dried rosemary crushed
- 1/4 tsp dried basil crushed (we use a mortar and pestle)
- Salt optional
Instructions
- Mix herbs together in a small bowl.
- Heat oil in a large skillet on medium heat.
- Add green beans and cook 10 minutes, stirring occasionally.
- Add garlic, onion, butter, and herbs to green beans.
- Cook 10 more minutes, until beans are tender.
- Add salt if desired.

Thank you for tonight’s dinner side dish….it sounds yummy and healthy. We eat fresh, organic so this fits in with our eating convictions as well. Thank you!
