Scoop out the red 'meat' (seeds and all) from the watermelon into a blender. (If it's a large watermelon, you can do this in batches as well.)
Add 2 cups of water and blend well.
Place your wire sieve over a large pitcher and pour the juice through it, straining out the pulp and seeds.
Repeat with remaining watermelon and 2 cups water, this time adding in the strawberries, lime juice, mint leaves and honey. Blend all together.
Strain into the pitcher.
Mix batches together inside the pitcher and sweeten to your liking.
Serve cold or over ice!
