Watermelon Strawberry Agua Fresca

Ingredients

  • 4 cups water
  • 1/2 of one large watermelon
  • 5-6 large ripe strawberries
  • 8 fresh mint leaves
  • 1/2 Lime, juiced about 1 1/2 Tablespoons
  • 2 TBL honey We use raw, local honey.

Instructions

  • Scoop out the red 'meat' (seeds and all) from the watermelon into a blender. (If it's a large watermelon, you can do this in batches as well.)
  • Add 2 cups of water and blend well.
  • Place your wire sieve over a large pitcher and pour the juice through it, straining out the pulp and seeds.
  • Repeat with remaining watermelon and 2 cups water, this time adding in the strawberries, lime juice, mint leaves and honey. Blend all together.
  • Strain into the pitcher.
  • Mix batches together inside the pitcher and sweeten to your liking.
  • Serve cold or over ice!
