No-Bake Granola Bars

Ingredients

  • 1/3 cup light tasting olive oil or other heart-healthy oil
  • 1/3 cup honey
  • 1/3 cup sucanat or lightly packed brown sugar
  • 1 3/4 cup rolled oats
  • 1 1/4 cup cereal We used some bran flakes we had on-hand, but you can use crisp rice cereal, cheerios, or whatever you have.
  • 3/4 cup dark chocolate chips
  • 1/4 cup nuts of your choice optional

Instructions

  • Line an 8-inch round or square pan with parchment paper. Set aside.
  • Combine the oil and sugars in a sauce pan over med-high heat. Stir until boiling. Boil for 1 minute while stirring. (This will caramelize and thicken.)
  • Combine the oats, cereal, and nuts in a large bowl.
  • Pour the liquid into the oat mixture and incorporate together well.
  • Gently spread mixture into pan, WITHOUT pressing down.
  • Add chocolate chips over the top and press down firmly all over so that chips get into the granola mixture.
  • For a quick cool, place the pan for 15 minutes in the freezer. Or you can cool them out on the counter and let them come to room temperature.
  • Cut into pieces and try your best to share them with someone else!
